The thought came to me the other day when I was talking to one of our guests (yes, he has inspired me a lot over the last few days) and asked him how he liked our cheese spaetzle. His answer surprised me at first: They were delicious like everything that comes out of your kitchen but… ( I love this but !!!)He said he prefers the onions to be translucent and mixed with the spaetzle and cheese. This got me thinking about the different ways you can enjoy cheese spaetzle. Everyone has their own preferences and that’s what makes the world of cheese spaetzle so fascinating.

Traditionally, Käsespätzle are served with crispy fried onions, which give the dish a savory and slightly sweet note. But our guest prefers the onions to be translucent and mixed directly with the spaetzle and cheese. This method of preparation ensures that the onions have a softer texture and a milder flavor that blends perfectly into the dish.

Käsespätzle is a traditional dish that is particularly popular in the Alpine regions of Germany, Austria and Switzerland. Everyone has their own way of preparing and enjoying this delicious dish. At the Hauserei, our local restaurant, we have a special recipe that makes cheese spaetzle an unforgettable experience.

The perfect cheese blend

The secret of our cheese spaetzle lies in the special cheese mixture we use. In cooperation with the local cheese dairy Sojer in Steeg, we ensure that only the best cheese goes into our cheese spaetzle. The cheese mixture consists of:

  • Mountain cheese: For a strong, nutty taste
  • Emmental: For a fine, sweet note and perfect melting properties
  • Alpine cheese: For an extra portion of creaminess
  • Bachsteiner:For the mild note
  • Tilsiter:For even more smoothness

This combination of different types of cheese ensures that our Käsespätzle are rich in flavor and wonderfully melt-in-the-mouth.

Fresh ingredients from our own production

What makes our cheese spaetzle special is not only the cheese mixture, but also the fresh eggs from our own henhouse. Our chickens are lovingly cared for and their eggs ensure a particularly smooth and tasty dough.

The onions: a must!

The crispy fried onions are another important ingredient in our cheese spaetzle. These give the dish a hearty and slightly sweet note that harmonizes perfectly with the spicy cheese. In our kitchen, the onions are fried until golden brown and crispy and then sprinkled generously over the cheese spaetzle. The contrast between the soft spaetzle and the crispy onions is simply irresistible.

The preparation: attention to detail

Our cheese spaetzle are prepared with love and care. First, make the spaetzle dough from flour, eggs, salt and a little water. The dough is then pressed through a spaetzle strainer directly into boiling water, where the spaetzle are cooked until they rise to the surface.

Next, toss the spaetzle in a large pan with a little clarified butter and then mix in layers with the cheese mixture. Cover each layer generously with cheese so that it can spread and melt nicely. At the end, the crispy onions are added on top and the dish is served hot.

Side dishes: potato salad or salad buffet

To round off the taste experience, we serve our cheese spaetzle with either a traditional potato salad or a fresh salad variation from the salad buffet. The potato salad offers a hearty addition, while the salad buffet is a lighter, crunchy alternative.
